What are plums?

Plums, or Prunus domestica, refers to more than 200 species, tree or low-stammed, evergreen or deciduous species coming from the Northern Hemisphere temperate lands, usually offering edible fruits.
Its flowers are generally white or rose, in clusters or corymbs. The fruit is a stone fruit, with flesh-bearing pericarp and woody endocarp.
Among the spontaneous species in Italy, the Prunus spinosa is widely spread, also known as blackthorn (prugnolo).
A plum tree is able to produce up to 100kg of fruits; after their drying and the evaporation of the water they contain, they reduce their weight up to approximately 35kg.
The wide range of plums is commonly divided into two categories: Chino-Japanese plums, spherical in shape, with varieties flatter or rounder than others, and European plums, elongated in shape. Dried prunes belong to European plums.
A plum tree can live up to 50 years and more.
Hazels obtained from the pitting can be used for heating.

What is sour cherry?

The sour cherry tree, or Prunus cerasus, is the tree from which Italian Amarene, also known as Marasche or Visciole, are obtained. It comes from Middle East, and it was then brought to Italy during the Roman period.
It easily adapts to any climate and it does not need any particular attention, since it often grows in wild form. It loves the sun, but it also resists against low temperatures and drought.
The fruits can also be used in spirit fermentation and distillation, or in crystallized fruit production. Most of candied cherries are actually obtained from sour cherries.
In the Emilian tradition, rural houses used to have a sour cherry tree and its fruits were eaten fresh or, instead, used to produce jam up to our times.

What does “traceability” stand for?

“Traceability” stands for the system which enables to follow the product path through each production, transformation and distribution step.
It starts from the identification of the raw material origins and it ends on the consumer’s table.The traceability system concerns all the components of the same food industry; from cultivation, harvest to the final consumer, passing through transformers and distributors.
Traceability has to enable to detect one or more lots of food introduced in the market by a company which has spread the same food.

You only need to go to the special section of the web site and type the production lot printed on each pack: you will immediately discover who produced the raw material.

What is the “integrated pest management”?

Integrated pest management(or fight) is the concrete fight against parasites by choosing only those pesticides approved by the Ministry of Health in a regularly updated list.
These pesticides comply with the principles of low impact on human health and environment and low residuals on the food.
In the 2009/128/CE Directive, the European Community defines integrated pest management as the “careful consideration of all available plant protection methods and subsequent integration of appropriate measures that discourage the development of populations of harmful organisms and keep the use of plant protection products and other forms of intervention to levels that are economically and ecologically justified and reduce or minimize risks to human health and the environment.
‘Integrated pest management’ emphasizes the growth of a healthy crop with the least possible disruption to agro-ecosystems and encourages natural pest control mechanisms.”

What does “organic” stand for?

It is the product resulting from the agronomic production following the principles of organic agriculture.
The general principle of organic agriculture is based on the fight against harmful organisms by introducing an element or organism which reduces its growth.
Organic agriculture does not use any chemical formulated products, in order to keep the natural ecosystem unchanged. The use of product and natural antagonists does not eliminate completely the harmful agent, but it keeps it in the damage threshold.
In comparison with chemical check, the organic check needs higher management and planning skills; it needs more time, and results are not always economically convenient.
Monte Ré offers an organic product line which is obtained by complying with the organic agriculture guidelines and law.

What is the food supply chain?

Agriculture and food industry stands for the whole production, economic and administrative factors which directly or indirectly take part in the path followed by an agricultural product, from itsproduction to its final use.
We talk about controlled food supply chain when the company applies a constant check made by a third independent partwhich certifies that the company is able to offer a safe traceability to the final consumer and strictly respects all the sanitary norms in force following HACCP criteria. Controlled industry enables the consumer to identify the responsibility of all the subjects who contribute to the production of a given food, from its cultivation to its sale, and to know the origin of the raw materials used in the purchasing process.
MonteRèadopts the principle of controlled industry in each production process and it obtained the Controlled Industry Certification for the product “Prugne secche di Modena”. All the production steps take place in the same building, where all sanitary principles indicated in the HACCPare rigorously respected.
The whole industry is in MonteRè: we deal with the product from the cultivation to the harvest, from the drying or transformation to the packing, up to the point of sale.

What is the difference between jam and extra jam?

The 50/2004 Legislative Decree indicates the definition of EXTRA jam asa jellied mixture obtained from the processing of one or more fruits non-concentrated pulp, disposing the minimal quantity of 45% fruit pulp, that is to say 45g of fruit per 100 gof extra jam. In case of 35% to 45% fruit, 35% we talk about jam.
MonteRè has decided to produce high-quality EXTRA jams, by using a higher quantity of fruit in comparison with the minimal standards of law. Our extra jams, in fact, are produced with at least 140% fruit, that is to say 140g of fruit used to obtain 100g extra jam, sometimes reaching 200%.

Fibreor sorbitol?

We commonly think that fibre helps intestinal regularity.
Dried prunes, however, naturally contain high percentages of sorbitol, a special substance which mayhave laxative effects on the most sensitive subjects. Benefitsfrom the sorbitol are often higher than the only fibre.

...and the I.P.A.?

The Fruit Drying Cooperative of Modena is Co-founder of the I.P.A. – International Prune Association, founded in 1990 and aiming to unify those Countries producing dried prunes. IPA now presents 6 member states, including Italy which is represented by the Fruit Drying Cooperative of Modena.
Only those countries producing dried prunes can be represented in the International Prune Association.
